Ultimate Radish Burger

Radishes – 3 ways! Pickled radish, radish patties and radish mayo make up these delicious burgers.

INGREDIENTS:

For the pickled radish:

  • 6 radishes, sliced
  • 2 tbsp red wine vinegar
  • 2 tbsp sugar

 

For the burgers:

  • 1 onion, peeled and finely chopped
  • 6 radishes, finely chopped
  • Olive oil
  • 500g beef mince
  • Salt and pepper
  • A handful of Parmesan cheese, grated
  • 1 heaped tbsp Dijon mustard
  • 1 large egg
  • 100g breadcrumbs
  • 4 burger buns

 

For the radish mayo:

  • 100g mayonnaise
  • Zest and juice of half a lemon
  • 2 radishes, finely sliced
  • Salt and pepper

 

To serve:

  • Lettuce
  • Fries

Method:

  1. Make the pickled radish. Mix together the sugar and vinegar, add the radishes and season. Set aside.
  2. Start the burger patties. In a large frying pan, slowly cook the onion and radishes in a drizzle of olive oil, until soft and then leave to cool.
  3. Put the mince in a large bowl and add the seasoning, Parmesan, mustard, egg and half the breadcrumbs. Mix well.
  4. Add the cooled onion and radish mixture and mix again.
  5. Shape the burgers into 4 patties and refrigerate for at least 30 minutes before cooking.
  6. Mix together the mayo ingredients and put to one side.
  7. Heat a little oil in a pan on a medium-high heat and fry the burgers for around 8-10 minutes, turning occasionally.
  8. Build the buns with the lettuce, burger and mayo, topping with the pickled radishes and serve with fries.
