Ingredients

  • 21 radishes
  • 2 whole Red Robin lettuces
  • 18 pecans
  • Ball of burrata
  • Drizzle of olive oil
  • Lemon
  • Salt and pepper, to taste

Method

  1. Wash your radishes and cut the top and bottoms off. Place these in a baking dish
  2. Drizzle olive oil over, season with salt and pepper and toss your radishes around, ensuring the radishes are covered
  3. Roast these at 220C for 20 minutes, or until the radishes begin to caramalise
  4. Wash your Robin lettuce leaves and place each individually in your dish
  5. Place your roasted radishes on the top and squeeze the juice of a lemon over it
  6. Add your burrata and drizzle with olive oil, salt and pepper.
  7. Enjoy!
