Radish, feta and Black Rice Salad

INGREDIENTS:
- 250g pack ready cooked black rice
- 2 tbsp Olive Oil
- 1 tbsp Red wine vinegar
- Salt & pepper
- A handful of chopped radishes
- 100g feta, crumbled
- A small handful cashew nuts
- A handful fresh dill, chopped
Method:
- Heat the rice according to the pack instructions, tip into a bowl and dress with the oil, vinegar, salt and pepper while still warm.
- Leave to cool slightly and then stir in the other ingredients and serve immediately.
