Honey and Rosemary Roasted Radishes 

Serves: Serves 4 as a side

COOK: 20 minutes

Radishes are much more dynamic than we give them credit for; as well as bringing a bright, peppery crunch to dishes when raw, they turn tender and mellow in the heat of the oven. They’re quick to cook, and best when served still hot.

Ingredients

  • 240g radishes, halved
  • 1 tbsp extra virgin olive oil
  • 4 sprigs fresh rosemary
  • 2 tbsp runny honey
  • Zest of ½ an orange
  • Salt and pepper

Method

  1. Preheat the oven to 220C. Tip the radishes onto a roasting tray and drizzle over the oil. Toss to coat and season generously with salt and pepper. Tuck the rosemary amongst the radishes.
  2. Roast the radishes for 10 minutes, then remove from the oven and drizzle over the honey, then turn the radishes with a spatula to ensure they’re all coated. Continue to roast for another 10 mins until bright pink and caramelising in places.
  3. Remove from the oven and serve as a side with roasted meats, cheeses, or salads.
