Roasted Radish & Feta Recipe
Ingredients (Serves 2–3)
- 1 pack of Love Radish, trimmed and halved
- 1 tbsp olive oil
- 100g feta cheese, crumbled
- Zest of ½ lemon
- A few sprigs of thyme or parsley
- Salt and freshly ground black pepper
- optional: use fresh & naked wild rocket for extra peppery flavour
Method
1. Preheat & Prep
Preheat your oven to 200°C. Trim and halve the radishes and toss with olive oil, salt, and pepper.
2. Roast the Radish
Spread the radishes on a baking tray in a single layer. Roast for 15–20 minutes, turning once, until tender with golden edges.
3. Assemble & Serve
Transfer to a serving dish and scatter over the crumbled feta, lemon zest, fresh herbs and your fresh & naked wild rocket. Serve warm or at room temperature.
Want a touch of sweetness? Add a drizzle of honey just before serving.
